Remove your portafilter and place it on a scale and tare the weight.

For a double espresso, grind between 18 and 21 grams of coffee into your portafilter
The right grind is crucial for a balanced, delicious espresso.
The fineness may need to be adjusted a little.
In general, the grind should be quite good.
Distribute the coffee by sliding a finger over the portafilter.
Place your portafilter on a clean, flat surface.
Apply downward pressure without tilting the tamper.
You don't have to rope incredibly hard - just enough to evenly trap the coffee.
It is often said that you should exert a pressure of 15 kg, but that doesn't matter, the same pressure should always be built up.

Clamp the portafilter into the group head and start the espresso machine.
The shot should start with a slow drop and then develop into a gentle, steady stream.
The extraction ends near the 25-30 second mark, causing the shot to thicken and become "blonde".
Stop the shot as soon as this process begins.
